ostrich Sliders

I haven't posted dinner in awhile so here ya go:
Ostrich sliders with Tabbouleh, or Tabouli if you're a yank.
One pound of ground ostrich.
Total of 1/2 cup of mixed spices. 
                  - Shallots from Planter's Seed Co., pink sea salt, basil from my garden, black pepper, onion powder, garlic powder, just a dash of ground ancho peppers from my garden.
1/2 cup of breadcrumbs.
1 egg, whole.
I mixed that up and made 10-14 little balls, flattened and cooked in a non-stick pan until done.  That's it. 
Buns are organic wheat rolls.
For the toppings:
Uncured, hormone free, dry rubbed and applewood smoked bacon.
Organic leaf lettuce.
Dill pickles.
Yogurt cheese spread:
Plain Greek yogurt, feta cheese, and garlic.

Tabbouleh is just out of a box but I added cucumber, tomatoes, and green onions. Rockin, baby!
