I have been neglecting my baking needs for a week or two. I just had to whip up something. Let's take a photo recap of what I made yesterday. I wanted a sandwich but had no bread and refused to buy any, so I had to make two loaves. Of course they are beautiful, but my desired dark brown on brown crust was a dark golden brown. I thought the humid weather affected the bread but after careful review of my process, I deduced that some cooking spray accidentally coated the top of my dough before it went in the oven. Fair enough, it tastes the same as always, and the second rise was completely manageable and high. I made a whole wheat bread with a failed rise, so I'll just leave that brick out of this blog post.

Second, the cupcakes. Yes yes yes. These are red velvet cupcakes with a cream cheese filling and frosting on top. I made the frosting with cream cheese, vanilla, butter, and a shitload of powdered sugar, beaten with a fork for 20 minutes. It's perfectly smooth and freaking delicious. I had twenty four cupcakes, now I have 19. When you bite into them, the cake is perfectly moist, and the surprise filling is the perfect accompaniment for the silky smooth cupcake. I could't make the topside icing perfect and pretty, as I don't have cake decorating supplies, but I think I did a decent job with a ziplock bag.
