Dirty South is just a name. The hot sauce contained beneath those words, however, is not an ordinary sauce. A beautiful yellow speckled with bits of black and red and orange is the final color. It is much darker during processing, and I was surprised to wake up and discover how bright the sauce looked in the morning light. Made with peaches, blue agave nectar, ginger, mustard seed, and habaneros, I have designated this as a dessert sauce. Sweet and slightly peachy and with the familiar habanero kick, this sauce would be delicious on ice cream, pie, or even fish tacos. I just put it on a spoon.
