Mac and Cheese, if you Please

I wanted some Macaroni and Cheese, but not the processed kind that undergoes extreme molecular recombination and gets washed in chemical baths.  I wanted real cheese.   I used a block of jack, a block of cheddar, and a block of Gouda.  A cup of buttermilk and a cup of whole milk, with some pepper, and that's the sauce. Instead of traditional elbow macaroni I used Cavatappi.  I just love those textured spirals.  I wanted some meat, naturally, so I used some smoked sausage that is very high in nitrates and preservatives and other crap.  Great.
