Another week, another case.  I wanted to do more, but I'm waiting on my container shipment.  I am excited about this sauce. I named it beautiful destroyer for the palette and the burn.  The sauce is also represented by Shiva, Indian god of destruction and sensuality.  It is a lovely blend of red peppers, habaneros, Bhut Jolokia peppers, celery, onions, a dash of this, and a dash of that. The color is a deep, rich red  achieved by the red peppers and the addition of Xanthan gum which also aids in proper consistency.  The smoky bouquet really somehow manages to penetrate the unavoidable vinegar aroma.   I didn't want to make it dangerous, so I only used about thirty pods for six bottles.  It is possible to eat a lot of this sauce in small amounts of say....1/2 teaspoon at a time ( if you pace yourself).  The tongue is sharp and sour and hints of spring vegetables and truck stops. The heat is amazing.  I love how the simultaneous numbing and burning can provide exquisite agony in your mouth.  Watch those eyes, it takes much scrubbing if you get any on your hands.  I like the gaudy yet regal art of India, and I tried to convey that on the label.  I have a general release of liability for people to sign if they even want to try this.

I have stapled a dehydrated Bhut Jolokia pod on the back of each chart.  What a deal!
